I
 don't know any functionalty in gvSIG or SEXTANTE that makes what you 
need. Maybe with some workaorunds (e.g. v.extract), time and batch processing 
files in SEXTANTE you can get what you want. In SEXTANTE (with Grass GIS and 
SAGA) you
 will find a lot of functionalities for raster and vector layers. 
The functionality you are describing is a typical one for the SEXTANTE toolbox 
and isn't difficult to develop. It will make the SEXTANTE toolbox even better. 
Maybe someone would like to develop it or could consider the possibility to 
hire a developer to create this new option. In the SEXTANTE user list you will 
find more help.
