Kevin, here my opinion to move this forward.
I was looking today into the bug tracker. We have this situation:
gvSIG CE: 135 (resolved 3, closed 2 open 130)
SEXTANTE: 48 (resolved 16, closed 2 open 30)
I don't think we should get solved all of them for the official release of 
gvSIG CE. But some of them are important. For example this one: 
http://gvsigce.sourceforge.net/mantis/view.php?id=172. There are some extrange 
behaviors in the layout document which make not possible to work properly with 
maps. Today gvSIG developers were talking again about this in the spanish list 
(http://osgeo-org.1560.n6.nabble.com/Error-Mapa-en-gris-td4356249.html)

I've found some bugs with a perfect situation: 
http://gvsigce.sourceforge.net/mantis/view.php?id=183. jmathieu reported a 
SEXTANTE bug (2012-01-19) and sent a piece of code. Today the status of this 
bug is "resolved". Thank you jmathieu for your contribution, Victor for taking 
a look into the code. 

I will make a summary of the most important bugs in order to start with this 
item of the list:
- fix everything that is marked "critical"   or "blocker" on the bug tracker
I will write the summary here 
(http://gvsigce.sourceforge.net/wiki/index.php/Known_problems) and notify there 
the url of each bug I consider "critical". If someone wants also to work on 
this, please tell it here. Then we can speed up the release of gvSIG CE 1.0
