Doug,

I turned all of the apps off and this odd behaviour stopped.

I then removed all apps.
I then added some of them, which I thought would not be associated with
this behaviour and turned apps back on.
The odd behaviour had still gone.

I then added the rest of the apps back in one at a time and tested the
behaviour in order to trap the app causing the problem.

I have added them all back in and the behaviour is still not happening.

Clearly I have missed one out!

However, this issue has currently gone away.

I'm not able to duplicate this.  My first guess would be you have some 
app that is replacing text in the clipboard.  What if you turn all apps 
off?  If you still have this happening, would it be possible to try the 
same procedure without Window-Eyes and see if it still happens?
