I really like the books from Access Technology Institute.  They come as
html, ascii, and Word formats (you get all), and you also get many mp3 audio
tutorials demonstrating points made in the books.

Where you see all the books for specific Office programs, all written
specifically for Window-Eyes users.
They also happen to be a little less expensive than other such educational
offerings, as well as coming in all of these various formats, and the audio
tutorials add a great deal.
