There is a program called Solid PDF Convertor
http://www.solidpdf.com/ that will turn any unrestricted pdf into a
Word document that you can then work with. It does a much better job
of this then Acrobat, which, of course, has it on doc conversion. Of
course, Acrobat full version will allow you to edit your documents...
it is just not a easy thing to do. But simple edits in Acrobat work OK.
