I was asked to help on a similar project at my synagogue library. One big source of frustration for me was that they didn't have any kind of mission statement. Its hard to know what books are appropriate for the collection if you don't know by whom and how the library will be used. When I asked our committee questions like: do the Rabbis use the library for their research? (old books good) are there adult text study classes? (old books good) book clubs? (old books probably not good) student groups (old book probably not good) using it, they didn't really know. But this info is essential before you start weeding. good luck!
