It starts but the whole application launcher with all the packages and menus showing up, doesn´t come up any more. It always wants to start, but can´t.

Could you please share the revision of Guix you're using? I tried MATE in a virtual machine and I could use the application launcher and the other menus, but I'm probably using an older guix revision (4fccad83875cf8f5846b181525f814ce5c240ef9). I'm wondering whether the problem you're seeing is related to stale cache and configuration files in your home folder. When using GNOME, for example, sometimes stale files lead to problems that break the desktop. We'd have to find out which MATE-related directories you can delete so that you can try restarting the desktop session and see whether the problem is solved when MATE creates the necessary files afresh.
