GRILLED TOMATO TACO SALAD

1/4 cup sour cream
2 tbs olive oil
3 tbs lime juice
1 tsp chili powder
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
2 pounds tomatoes, cut into 3/4 inch thick slices
4 whole scallions, trimmed
12 oz pkg fully cooked Southwestern flavored chicken sausage
8 cups shredded lettuce
2 avocados, cut into chunks
1/2 cup cilantro leaves
2 cups tortilla chips

Heat a outdoor grill. In bowl, whisk first 5 ingredients. Sprinkle with 1/4 tsp
salt and 1/8 tsp pepper. Refrigerate until ready to serve. Brush tomatoes and
scallions with olive oil. Season with remaining salt and pepper. Grill 5 min.
or until beginning to char, then flip and cook for a few minutes. Remove
veggies. Chop scallions into bite size pieces and cut tomato slices in half,
saving their juices if possible. Grill sausages until heated through. Cut into
coins. Put lettuce, sausage, avocado, half the cilantro, scallions and juice
from tomatoes into the bowl with the dressing. Toss. Divide chips onto 4
plates. Top with salad and tomato slices. Garnish with remaining cilantro.

This recipe makes 4 servings of Grilled Tomato Taco Salad.*
