Stefan, Rails 3 doesn't officially support Ruby 1.9.1, and I've found Ruby 1.9.1 to be horrendously unstable anyways. Ruby 1.9.2 is in RC stages, so a final release should come soon, but there is no sign as to when Heroku would support this. I would recommend running Rails 3 on Ruby 1.8.7, which is supported, and which I can say from experience works great.
