A quick and dirty method would be just to rename the .vmt and it's
corresponding references. :)

So instead of
materials\VGUI\playermodels\characters\SiNTekGrunt\sintekgrunt.vmt

change it to
materials\VGUI\playermodels\characters\SiNTekGrunt\grunt.vmt

good luck, with whatever method you choose.
