Hey There About your Fedora comment, couldn't be farther from the truth. Fedora is about to go "Gold" (As much as you can say that for a community project) with the Final build to be released this month or next. I have colocation in the NYC area, and have had my Dual 1u Athlon MP server be as stable as could be for the past month using Fedora Core 2. Using YUM to upgrade it is great, 10 minute process updates everything on your system, including the kernel, without you having to get into any risky business of compatibility issues by upgrading the kernel yourself.
There are no real "Gotchas" with Linux. They are a bit more sensitive than Windows, so they can be "Accidentally" taken offline a bit easier if you execute the wrong command. Otherwise, they are a sit and do their job kinda box. No routine maintenance required, unlike windows and constant security patches. Hope this answers a few of your questions.
