If you use screen to run your server you can just use the command "screen -r [process name or pid]". That brings up the console and you can enter commands as you normally would. Then just hold down ctrl and a, then hit "d" to detach from the console (it doesn't shut down).
If you are using some other way of running your servers then someone else would have to answer that, although I would assume there would be command line options for accessing the console in a similar fashion to the way you would with screen.
