You only have to UV map it if you change the 3d mesh. (IE. add more polygons or delete polygons). If you want to just do a reskin job, you can just paint over the existing material file. Feel free to increase the resolution if you want more detail. Doing this won't require any changes to the mdl file. I don't quite understand what you mean when you say "apply different materials". What's stopping you from opening up the existing material and painting the grip part tan, and the rest of it black. You don't need to touch the 3d mesh or UV maps.
