OK..success! I did another complete uninstall, manually deleted any directories created in process of trying the 2 minute app..AND rebooted.
Then I just recreated the same steps, specifying Rails version 2.1.0 and NOT installing mongrel. The trial thingybob app worked fine. Hallelujah! Moving on to the second app in the installation tute now..
