John,
Postfix is required for LSB, and LSB is required for HPLIP. Postfix will
not effect Thunderbird in any way.
To remove hplip and start over:
cd hplip-1.7.2
sudo make uninstall
sudo make clean
sudo rm -rf /usr/share/hplip
then to re-run the installer:
./install.py
If the automatic installer is giving you problems you can the manual
install:

Ubuntu -- and putting up with a slow printer?
