It depends on your hardware.  From Bill Bitner's z/VM System Limits
SHARE presentation:

 

Virtual machine size:

- Supported/Tested 1 TB (240)

- Hardware limits

* z10 8TB

* z9 1TB

* z990 256GB

* z900 256GB

 

That's for one virtual machine.  There's also a guest real limit of 8 TB
imposed by PTRM space limits.
