other than Latex there is also the option of using docbook format. Its

There is also another good type-setting system used by some books
these days called Lout which has been used for many books (Mark
Summerfield's books for one on Qt/PyQt) and is claimed to be easier to
learn than latex.

You could of course considering making the ebook on www.wikibooks.org also.
Play around with them and see which one you like most.

For some assistance with LaTeX and not making it completely code
writing, you can use a software called 'lyx', it should be in the repos
of your distro.
