Generally speaking, asking for step by step instructions in any mailing list suggests that you have not your own due diligence to search (at least in my mind). Today there are hundreds of sites on the subject matter with step by step details. Search key words "linux how to setup email server" in your favorite search engine. When you encounter problems, come with specifics to this mailing list and I am sure collectively we can help you resolve. For starters: 0. Be ready to read (a lot) and experiment. With this method you will learn IMO, if you are *serious* about sys admin; in this case email server 1. you need to know a few details about DNS like MX records besides the config details for the mail server. Note that some email server package will provide SMTP service only e.g. postfix (which BTW comes with excellent documentation) 2. For POP3/IMAP you may have to install yet another package e.g. dovecot (the entire .conf file is well commented for what each setting does). To start learning the easy way try Zimbra CE for CentOS 6. It comes with a shell script where you have to answer a few questions and does the configuration setup.
