No idea about texinfo, though the manual was pretty good when
I had reason to look at it. In LaTeX (with TeTeX or most modern
distributions of TeX), one can have
  \usepackage{times}
or
  \usepackage{palatino}  % Slightly informal, but looks nice
or
  \usepackage{mathpazo}  % Above including math fonts
in the preamble.

I would imagine that texinfo has some mechanism to allow you
to specify that.
