There should be no problem doing this as far as I have seen on two G3 machines.  I've 
used 9.1 on both my iMac and Pismo and printed successfully to my 740.

Do you still have the Epson CD?  What I did when I got 9.1 was fresh wipe of the hard 
drive and then put on 9.1.  Then I popped in the Epson CD to reinstall the drivers.  
After a restart, you should see the 740 for your selection in the chooser.  

This Epson CD isn't necessary in OS X because the drivers are built into the OS for 
the 740.  You just have to select it from print center.

If you are having USB problems, try a different port and remember that USB needs 20 
seconds or so to reset itself or something like that.  USB guidelines ask you to allow 
30 seconds after unplugging something before plugging it back in.  It is surely 
hot-pluggable, but it needs time to recognize items and to speak with them before you 
will actually notice the connection is official.  I never had trouble with USB and my 
printer, but it sure was moody when I tried using a USB CD-RW.

Really, though, any of your USB ports should be fine.  I used the one on my iMac's 
keyboard most of the time, but I had also used the side ports on the iMac itself.
