I think most of us know about those guys, but I think the original poster
was questioning whether there were any Cocoa or Carbon apps that would do
the job. And unfortunately, none of these are X native yet, although a
version of Cubase has been announced but hasn't shipped.

The only two decent sound editing apps for OS X that I know of are Felt Tip
Sound Studio and Peak, but these are not multi-track recording environments.
