Assuming System 8 or 9: 
Find the "Remote Access" control.

It may be on the Control Strip at the bottom, or on the Apple menu under
Control Panels.
Or go to File"Find and type in "remote".

Click on this, (select "open remote access" if it's on the control strip).
(The control strip may be retracted to a triangular button on the bottom
left, click on that and it'll extend along the bottom of the screen. Just
click on the icons here to see what they are, noting bad will happen.)

Now you should see its window with the basic name, password, phone number
settings. 
Click on "options", then "connections".
There is a check box for "disconnect if idle for _ minutes."

Select this and type in a number -- 5 minutes say. Then if you're online
but idle for more than 5 minutes it will hang up.
Turn off the "prompt every 5 minutes to maintain connection"

If you want to disconnect immediately, click on the control strip item and
you'll get a submenu with "disconnect" on it.
