in Imail:
mail host: domain.com
mail host alias: mail.domain.com

In DNS:

domain.com. MX 10 mail.domain.com.
mail.domain.com. MX 10 mail.domain.com.
webmail.domain.com. A ip of Imail

How do I set things up like that with minimal downtime and so that users
>won't have to log in using the full '[EMAIL PROTECTED]'

With virtual mailhosts on one ip, users must always use the fully
qualified name for both webmail and POP3/SMTP logins.
