You could do that, but I would recommend using the AddDomain and AddUser utilities to migrate them. You can use/modify scripts posted in this forum two or three months ago to list users and domains from the registry. After everything is setup, copy the contents of the directories to the new directories on the new server, switch MX records and you're done. You'll want no incoming mail for these domains during the transfer to migrate the files cleanly, but this can be scripted so it only takes a few minutes.
