Some places consider greylisting to be denying access to a server that
they feel is spamming or connecting too often for a period of time,
though technically, this would be generally implemented as tracking the
triplicate of sender's IP, Mail From and Rcpt To, and allowed back after
5 minutes. Anything beyond a 5 minute wait will not generate notably
better results.
My guess is that their "greylisting" is either broken, or this is not
real greylisting, but some sort of deferment system that your server
triggered with volume and/or content. You might want to check to see if
there was unusual traffic to this IP, and also watch out for
re-triggering volume controls with spooled messages since that can
result in growing traffic to them over time.
