Most people put their mail, web servers...etc on what's known as a DMZ an
area isolated from your regular network. Depending on the size of your
network you could have the following:

Router-----Firewall-----(DMZ)-------(Regular Network)

There are also several books you could read that would help Firewalls by
Sybex, And  Building Internet Firewalls by (I forgot)
The later of the two is suppose to be the best but it seems to me that its'
only focus is Unix and the material is a bit dated. I
hear there is another edition in the works.
