We've just done this actually.
Our process was (keeping in mind we use CNAMEs, you may or may not):
- shorten the ttl for the CNAME record from 24hrs to half an hour
- wait 24 hours for this to proagate
- change the CNAME to the new servers
- wait 24 hours for this to propagate
- lengthen the ttl for the CNAME record to 24 hours
Of course this assumes you control your own DNS servers etc.
