The only drawback to changing that text is that you lose the number of 
current connections and total number of connections that you otherwise can 
see (which is pretty nice, but the logs give you a lot more information).

If you are going to change the welcome message (greeting), you should make 
sure that it starts with "220" followed by a space and then followed by 
your domain name, to follow the RFCs (don't keep the "X1" that IMail 
inserts -- it is a technical violation of the RFCs).

You can try telneting to a couple of SMTP servers to see what theirs say 
(maybe some big ones like Hotmail and AOL) and see if you like them.  It's 
not nice to say you're running something other than what you are, but 
sometimes you have to do what you have to do.
