One option I've considered is using declude's catchallmail option and then write a parser for the resulting messages.
The parser to check for certain tags and patterns is not exactly simple. Then the parser has to return the message to the queue if no exploits were found. Even that is a bit of a problem in itself. None of it unmanageable of course.
