At the time we didn't do regular backups, but I managed to get all the users mailboxes and backup the registry before it finally died completely. It was a simple manner of installing IMail on another machine, copying over the mailbox directory structure and editing the exported registry file to make sure that the paths were correct. When I imported the registry file and started the IMail services, it was up and running. Total down time was about two hours, and would have been less if I had had a proper backup. Now we do regular backups, especially of the IMail registry keys, and have full confidence that bringing it back up on another system would take no more than a half an hour.
