Someone from Ipswitch would have to say for certain, but most likely the MX 
records are not cached.  That is typically the responsibility of the DNS 
server, and IMail (like most mail servers) includes a DNS resolver (which 
connects to a DNS server, which then handles the request), not a DNS 
server.  Therefore, it should be up to your DNS server to properly handle 
the caching, in which case the MX records would be cached for the amount of 
time in their TTL field (you can use nslookup or dig or 
http://www.DNSstuff.com to find out the TTL for any given domain).
