As far as I know, the only possible solution is to install a 3rd party syslog program and the make Imail log to it. Take a look at http://www.kiwisyslog.com/ - great and free :-) It also gives you the option to split SMTP, SMTPD, POP3 and IMAP traffic to different logfiles.
If you are moving the logs, consider moving them to another disk/partiton as this will increase system performance.
