As a matter of fact, I was just beginning a re-read of the RFC this morning and the question came up later in the day. I haven't gotten all the way through the RFC yet.
Anyway, it was just one of those nagging questions that sits on the "someday-oneday I'll try to figure it out list" and today was the day.
And I am a mail admin and I do see the value in it being there, and like many of us spend too much of my day dealing with spammers so I promise that I will not try to remove it or change it.

The "why" part is dictated by RFC 2821. With due respect, I have to wonder why you would want to "suppress it or replace it with something else". It helps -- when not forged -- in tracing the origin of an e-mail. Mind you, spammers have a habit of doing just that to cover their tracks. Since you are presumably a mail admin seeking technical help on this Forum, I am not assuming that your question was asked with a view to know how to masquerade the headers of the e-mails that originate from your mail server.
So, the short answer to your second question is "No." The long answer is "Noooooooooo, unless you have unusual, technical and valid reasons to do so." (In this case, I'd be interested to know them.)
