You'd need a "regex header stripper"
/^Received: from.* \[192\.168\.1.*\] by mail.domain.com \(SMTPD32/ IGNORE
... where IGNORE is the IMGate/postfix header_checks.regexp syntax for deleting any matching header line. Of course, you'd have to make sure the regex was accurate, but I think the above would do it.
I hate to get back into the topic of unusual spam detection, but...
Removing Received: headers may cause the recipient to think that the E-mail is coming from a MUA, not a MTA -- so if it isn't from a local user, it may get caught as spam. So it may not be wise to remove the Received: header (and, I think it's against the RFCs...).
