Good advice, thanks Eric.

I'm about to jinx myself, but this solution was also suggested by
Ipswitch (they have been very helpful and responsive)... both of our
name servers are equally reliable, but since we've listed only one name
server in the SMTP settings, we've not had any re-occurrence of the
problem... about 6 days... I'm sure I've just cursed myself by saying
that...
