Our Exchange Server, which I'm going to be relaying the mail to, is hooked
up to an Internet address that has a dynamic IP address.  We have a host
name which is constantly updated to point to the correct IP address.  When
editing the "/ETC/HOSTS" file as instructed in the Store and Forward article
is it possible to use a "host name" in the first column of "/ETC/HOSTS"
instead of using the IP address?  Or do you have to use an IP address in the
first column of the "HOSTS" file?

You can't use a hostname there -- the HOSTS file only lists IP/host combinations, where DNS resolution is bypassed (back in the old days, before DNS, the HOSTS file was the way to find *all* Internet hosts).
