I reccomend memtest86 to test the ram. I have had great results in it
finding bad ram modules. A through ram tester can take some time to complete
a full range of tests.

If possible put alternate ram in the mail server and get it running and use
a less crytical machine to check your ram.

If by "certain point" you mean a point where the box hits the bad RAM,
yes--but  this  point is going to occur in a variable fashion based on the
daemons'  resource  usage  after  startup.  Remember,  you're not running
the  same  test  script  against the box every time, but just leaving  it
open  on  the Internet. A "range" of 2-3 days is way more consistent with
such issues than, say, 2-10 days.
