I reccomend memtest86 to test the ram. I have had great results in it finding bad ram modules. A through ram tester can take some time to complete a full range of tests.
If possible put alternate ram in the mail server and get it running and use a less crytical machine to check your ram. Remember, you're not running the same test script against the box every time, but just leaving it open on the Internet.
