I would use the DNS change.

You can remove there Pop3 and SMTP pointers but leave the MX, if they are
different.  This way their mail will continue to be received and accumulate
but they cannot check or send email. More incentive for them if they know
mail is waiting for them and better public relations than just bouncing all
there email.
