If I always want all mail sent through the remote gateway, am I correct in saying I should set the number of tries to 0 in addition to checking the "Send all remote mail..." checkbox?
Your question is a symptom of more bad GUI design. The GUI should separate these two settings. Once you check "send all mail through gateway", the retry count is ignored.
