...it's the only domain on the server, but it somehow didn't have an IP address associated with it (doh!). I assume that came about because the test environment is on DHCP. In any case, creating the correct Address value within HKLM\Software\Ipswitch\IMail\Domains\mail.uwi.com.au fixed it. Thanks for the pointer.
