Does anyone know for sure does Pop and Imap use the MX records and/or
preferences, or is that used only by SMTP? I seem to be getting conflicting
information.

MX records are just used by SMTP, to determine what hosts accept E-mail for a domain.

POP3/IMAP connect to a specific host (without using MX or other DNS records, aside from standard A record lookups), and do all their interaction with that one host.
