Whether this is the "best" way to do it I'm not sure, perhaps someone else can comment but this is the way I do it. mail.domain1.com is my official host name (and static ip host) and is set as an mx in both domain1.com and domain2.com in DNS. Then I have "domain2.com, domain1.com" as host aliases in IMail and mail to either of those domains for all of my users gets delivered.
