Whether this is the "best" way to do it I'm not sure, perhaps someone else
can comment but this is the way I do it.

mail.domain1.com is my official host name (and static ip host) and is set as
an mx in both domain1.com and domain2.com in DNS.

Then I have "domain2.com, domain1.com"  as host aliases in IMail and mail to
either of those domains for all of my users gets delivered.  It works for me
and it sounds like that's what you need for your situation.
