I have a box I could setup right away but I would only have 4 drives in it, so how should I configure it with 4 drives? RAID 5 with 3 containers for system, log/spool, and mailboxes? or what do you recommend?

Only one problem Len, my IMail 7.15 has been and continues to be broken. I have SMTP service hangs up to 6 times a week sometimes. Customers are complaining and it is becoming a major hassle. I am not saying IMail is not better than other systems out there, but I am not going to lose customers over a flaky service issue.
yep, that mysterious stopping of Imail service but only on some boxes (that are effectively unfixable after max effort) is tough. but clearly, that's a tiny minority of all Imail servers.

yep, a real b!tch. you're broken. It your situ, I would get a new, different box (model, brand, video, nic), do a fresh OS install, patch it up, put nothing but Imail on it. That would be cheap if it fixed your problem and probably work for years.
