4 drives, safety and speed, most wasteful on space, try raid 10

his has been beat to death here.

raid5 is slow vs raid1, so if you insisted on RAID, it would be two RAID1s for those four disks.

I'd put the OS/Imail on one drive (RAID1 pair)

mailboxes on the other drive

For the volatile/non-critical data (queueing and logging) no need for RAID, so slip in a Promise Ultra ATA controller, with 2 ATA100+ drives with 8 MB drive cache, one on each ATA channel. one disk for dedicated to queuing, and one disk for logging.
