Back in Jammu in our sugar cane fields, I have seen two distinct cultivars:
taller, thicker canes pale green stems used mainly for eating raw and
extracting juice common in Indian markets; and second more tufted, shorter
and less thicker canes, mostly reddish in colour, rarely seen in market but
processed for the yield of Gur/sakar finally refined into commercial sugar.
