We have a full-time sign-language interpreter for our deaf student, also. I'd certainly be interested in any technology that could be useful for this, though.

Other than the teacher writing out notes every day, I don't know of any software that would work. The Special Ed people have tried Dragon Naturally Speaking and wireless Bluetooth headsets and an associate to go along with him. You can imagine how badly that works.
