Since many spammers are probably using search engines to find wikis, you
could just ensure that no wiki-specific keywords are found:

* No "wiki" in URLs.

* "Cripple" all wiki-typical keywords like this:
  <span>Ed</span><span>it</span> (instead of "Edit");
  "<span>Las</span><span>t edi</span><span>ted on</span>"

  This will make the keywords impossible to be found, but they will
  still be human-readable without problems.

I don't have any experience with wiki spam, but it might be worth giving
a try, provided that you have enough time to fiddle with the wiki
source.
