Previously I did some work on categorizing exceptions into appropriate
Polaris status codes, in particular by extracting the code from the underlying
cloud storage provider exception.
When an exception happens while the Iceberg SDK is performing an IO
operation, using for example `TableMetadataParser.read()`, the SDK wraps those
exceptions in an IOException and then a RuntimeIOException, which currently
bypasses our cloud provider exception mappings and results in a 503. This PR
attempts to unwrap those exceptions and apply our existing logic to them.
