I will say the comments about not having an LTS got me wondering what I had
missed.
Both java se and temurin say 25 is LTS.

we really only care about temurin since thats what we base our docker images
on. So recent LTS versions being 17, 21, and 25. So moving to 25 for the Docker
image makes sense to me.
