See the examples at www.geocities.com/itextpdf that use a PdfStamper. The general model is:
PdfReader reader = new PdfReader(...); PdfStamper stp = new PdfStamper(reader, ...); AcroFields form = stp.getAcroFields(); form.setField(field, value); .... .... stp.close(); You may also flatten the fields if required.
